CHEESES & DAIRY: LOCAL ORGANIC MILK, INCREDIBLE ITALIAN TASTE
Bringing skilled cheesemakers from our native region of Campania, Italy, our goal is to make the experience of three generations of cheesemakers available to American gourmands. Each of the fresh and aged cheeses we offer is either made in the traditional, authentic “pasta filata” or “stretched-curd” methods or a derivative of such processes, such as our ricotta.
We are proud to offer only cheeses made from organic cow’s milk. Our “Fior di Latte” mozzarella and Burrata are made on-site daily at the Mozzarella Store, while our other selection of cheeses and milk-based products are made from our nearby dairy factory, Golfo di Napoli Dairy.
“FIOR DI LATTE” MOZZARELLA: THE ROSE OF OUR STORE
BACKGROUND:
“Fior di Latte,” or “milk’s flower” mozzarella is the most famous cow’s milk cheese in the world. It is a typical product of the Italian region of Campania and in particular of the Lattari Mountains located in the center of Golfo di Napoli (the Gulf of Naples). To honor our land of origin and the tradition of Fior di Latte, our neighboring diary factory where many of our cheeses are produced is named, “GOLFO DI NAPOLI DAIRY.”
The experience and skill of the master cheese maker are key factors for obtaining an excellent final product. Starting from the teachings of our ancestors that date back to the 5th century B.C., we have gained a proven experience and a growing cheese mastery, always remaining faithful to the pastoral tradition from which this activity originates and continuing to give life to simple, genuine and natural products with a markedly handmade imprint.
AT OUR STORE:
As quality and freshness are of utmost importance to us, we make our Fior di Latte in-house at our Mozzarella Store daily from fresh cheese curd brought in from our dairy, Golfo di Napoli Dairy.
Fior di Latte is enjoyed around the world in a number of ways. Our signature Fior di Latte can be best appreciated by itself or alongside a number of accompaniments such as traditional Prosciutto di Parma. We also offer Fior di Latte “sheets” stuffed with vegetables or salumi. Finally, Fior di Latte is a primary and distinctive ingredient in most of our pizzas, panini and salads, creating unique flavors you won’t find anywhere else.

Burrata
Meaning “buttery,” burrata is made from an outer shell of firm mozzarella with a creamy interior of stracciatella (small shreds of mozzarella) and panna (cream). When cut open, burrata’s buttery, creamy panna spills out to create a delicious pool to be soaked up by bread or other complimentary accompaniments.

Ricotta & Fior di Ricotta
Literally translated, “re-cooked,” ricotta is a fresh, creamy white and granular cheese that is mild and slightly sweet. It is created from reheating whey that is left over from the production of other cheeses, such as provolone. Fior di ricotta, “ricotta’s flower,” is the best selection from our ricotta.
