Our Mozzarella & Cheese Maker, Armando:
Our mozzarella and cheese maker, Armando, grew up in the commune of Castellammare di Stabia, about 20 miles southeast of Naples, Italy. About 10 years ago, Armando became highly passionate about mozzarella and cheese making after spending time at his friend’s dairy, “La Schitana”. Soon after, he began officially training under the guidance of his friend and mentor and after learning the basics of working with milk, specialized in working with the spinning machine. He has spent the rest of his tenure at “La Schitana,” continuously perfecting his skills and efficiency while always ensuring the highest quality final products.
When it comes to the quality of his final products, Armando understands how important each raw ingredient is in the process. In fact, his biggest piece of advice for guests who would like to make homemade mozzarella is, “If you do not know the milk, don’t make it.” That is why he was so eager to discover we would be sourcing our milk from the highly reputable organic, sustainable farm.
Armando jumped at the chance to work in America to help introduce Americans to authentic Italian-style Fior di Latte (mozzarella) and train other eager individuals in mozzarella and cheese making. He is so passionate about cheese making, in fact, that when asked what he would be doing if he were not in this profession, he simply stated, “I don’t know!”.
In his free time, Armando enjoys hosting dinners and playing soccer with friends. He hopes he will be able to help mold a cheerful and professional atmosphere at Mozzarella Store and that guests will be able to enjoy an experience they have never had before.
