CHEESES & DAIRY: LOCAL ORGANIC MILK, INCREDIBLE ITALIAN TASTE
Bringing skilled cheesemakers from our native region of Campania, Italy, our goal is to make the experience of three generations of cheesemakers available to American gourmands. Each of the fresh and aged cheeses we offer is either made in the traditional, authentic “pasta filata” or “stretched-curd” methods or a derivative of such processes, such as our ricotta.
We are proud to offer only cheeses made from organic cow’s milk. Our “Fior di Latte” mozzarella and Burrata are made on-site daily at the Mozzarella Store, while our other selection of cheeses and milk-based products are made from our nearby dairy factory, Golfo di Napoli Dairy.
While most of our Fior di Latte and Burrata is made in the early hours of the morning for use in our restaurant and for retail, we will make special productions during the day when guests and passers-by can view our process from inside our store or through our window on Pearson St. In the future, we also hope to offer mozzarella making classes.
Guests can enjoy our cheeses in a number of ways, whether in pizzas, panini and small plates in our café, for a quick lunch from our fresh-daily grab‘n’go refrigerator or to enjoy at home in their favorite recipes. We will also offer premade cheese and charcuterie plates for quick and easy additions to your next dinner party! For inspiration on simple, delicious and wholesome recipes, be sure to check out our curated Recipes tab on this site.
While Mozzarella Store’s primary dairy offerings are our cheeses, we also offer fresh Yogurt and “Fior di Latte” Gelato.

“FIOR DI LATTE” MOZZARELLA: THE ROSE OF OUR STORE
“Fior di Latte,” or “milk’s flower” mozzarella is the most famous cow’s milk cheese in the world. It is a typical product of the Italian region of Campania and in particular of the Lattari Mountains located in the center of Golfo di Napoli (the Gulf of Naples). To honor our land of origin and the tradition of Fior di Latte, our neighboring diary factory where many of our cheeses are produced is named, “GOLFO DI NAPOLI DAIRY.”
The experience and skill of the master cheese maker are key factors for obtaining an excellent final product. Starting from the teachings of our ancestors that date back to the 5th century B.C., we have gained a proven experience and a growing cheese mastery, always remaining faithful to the pastoral tradition from which this activity originates and continuing to give life to simple, genuine and natural products with a markedly handmade imprint.
AT OUR STORE:
As quality and freshness are of utmost importance to us, we make our Fior di Latte in-house at our Mozzarella Store daily from fresh cheese curd brought in from our dairy, Golfo di Napoli Dairy.
Fior di Latte is enjoyed around the world in a number of ways. Our signature Fior di Latte can be best appreciated by itself or alongside a number of accompaniments such as traditional Prosciutto di Parma. We also offer Fior di Latte “sheets” stuffed with vegetables or salumi. Finally, Fior di Latte is a primary and distinctive ingredient in most of our pizzas, panini and salads, creating unique flavors you won’t find anywhere else.
Meaning “buttery,” burrata is made from an outer shell of firm mozzarella with a creamy interior of stracciatella (small shreds of mozzarella) and panna (cream). When cut open, burrata’s buttery, creamy panna spills out to create a delicious pool to be soaked up by bread or other complimentary accompaniments.
Like our Fior di Latte, our burrata is made in-house at our …
Literally translated, “re-cooked,” ricotta is a fresh, creamy white and granular cheese that is mild and slightly sweet. It is created from reheating whey that is left over from the production of other cheeses, such as provolone. Fior di ricotta, “ricotta’s flower,” is the best selection from our ricotta.
Due to ricotta’s mild characteristics, it can be enjoyed in a number …
For a more intensely flavored mozzarella, our smoked “Fior di Latte” mozzarella starts with our signature Fior di Latte. It then undergoes a natural smoking process in which the cheese is cold-smoked with straw in a special machine for about 50 minutes. The end result is a semi-firm cheese with a beautiful golden-brown exterior with just the right amount of …
Unlike the pre-sliced cheeses found in the dairy isle of your local grocery store, our provolone from Golfo di Napoli Dairy is made in the traditional southern Italian way and packs much more authentic flavor in every bite. The end result is cheese that no longer qualifies as a mere addition to sandwiches or dishes, …
Caciocavallo is another familiar “pasta filata,” or “stretched-curd” cheese originating from Southern Italy. Its name’s significance, “cheese on horseback,” derives from the way in which the cheese is tied with a rope and hung to drain. Our Caciocavallo is fresh and semi-firm, with a thin and smooth straw-yellow rind and compact interior. It has a delicate flavor, with a drier …
OTHER DAIRY PRODUCTS:
Like our “Fior di Latte” mozzarella, our “Fior di Latte” Gelato can be described as “milk’s flower,” for its beautiful expression of our highest quality milk and cream. A simple mixture of milk, cream and sugar, with no added flavors or eggs to overpower the purity and freshness of the milk, our Fior di Latte gelato is slow churned in …
