For a more intensely flavored mozzarella, our smoked “Fior di Latte” mozzarella starts with our signature Fior di Latte. It then undergoes a natural smoking process in which the cheese is cold-smoked with straw in a special machine for about 50 minutes. The end result is a semi-firm cheese with a beautiful golden-brown exterior with just the right amount of smoky flavor.

Smoked Fior di Latte can be added to a number of dishes, particularly those with savory, earthy flavors. It is also very popular as a snacking cheese, served either fresh or baked on bread. At Mozzarella Store, we use it on a number of our signature pizzas such as our Porcini Pizza and our Asparagus & Pancetta Pizza.
